The Green House

In late 2018, the Novio’s team opened a three-season greenhouse in Hermon, Maine. Located a short distance from the Bistro, the 1,500 square foot farm gives the team freedom to explore varieties of tomatoes, greens and other produce that would otherwise be difficult to source from local purveyors. Harvesting in the greenhouse begins in March and continues thru November.

A regular season’s harvest provides the Bistro with a wide variety of tomatoes, cucumbers, leafy greens, edible flowers, micro greens, and a wide variety of herbs. These offerings and planting schedules change each season based upon the needs of the Bistro’s kitchen and bar.

Our greenhouse utilizes hydroponics for the leafy greens table and all of the tomato buckets. We believe this method of farming is advantageous for many reasons, including:

  • Faster growth rate of vegetables
  • The ability to maintain control of the plant’s conditions and nutrients
  • Greater yield
  • Less water use

During the harvest season, the Novio’s team makes weekly deliveries to Danforth’s Family Market in Hermon, Maine. These deliveries typically include bags of freshly harvested mixed greens, microgreens and fresh herbs.
